This Persian salad is so simple and quick to make especially if you don’t have to chop it yourself.

3 large cucumbers diced and deseeded
2 medium tomatoes diced and deseeded
3 green onions
1/2 red onion diced
3 TBSP fresh dill
1/2 tsp garlic powder
Juice of 1/2 lemon
3 TBSP EVOO
I find removing all the seeds from the tomatoes and cucumbers makes it less watery and soupy. Once you have everything deseeded and chopped, add everything to the bowl and mix well. Enjoy!
