Chicken Bacon Caesar wraps

This is one of those recipes like most of mine where you can adjust little things to fit your macros or lifestyle. We have a few low carb”ers” and my kids just ate this on hoagie rolls. We had tons of leftovers for lunches the next few days.

RECIPE

2.5 lbs boneless skinless chicken thighs

1 lb thick cut bacon

3 romaine hearts (chopped)

2 large tomatoes (diced)

1/2 cup Parmesan cheese

1/4 cup Purple onion (optional)

Greek seasoning

Dressing

1 cup Mayo

1/2 cup Parmesan cheese

1/2 lemon(just the juice)

1 tbsp white vinegar

1 tsp Dijon mustard

1 tbsp Worcestershire sauce

1 tbsp garlic paste

1-2 anchovies

2 tsp black pepper

Salt to taste

Blend together in a food processor.

Season your chicken with Greek seasoning then fry and chop into pieces. Fry your bacon and chop that up as well. Add all salad ingredients to a bowl and assemble your wrap or sandwich. Dip in your Caesar. Enjoy!
