Creamy Farmer John Soup

- 1 lb ground pork sausage
- 1 lb elbow macaroni
- 1 medium onion(diced)
- 3 stalks celery(diced)
- 4 cups chicken broth
- 2 tbsp garlic(chopped)
- 2 cans diced tomatoes with chiles
- 8 oz fresh spinach
- 1 cup grated Parmesan cheese
- 3/4 cup heavy cream
- 4 oz cream cheese
- 1tbsp Italian seasoning
- Red pepper flakes (optional)
- Salt and pepper to taste (don’t be shy!
- Parsley
Brown sausage and add 1 tbsp Italian seasoning, red pepper flakes, and salt and pepper. Add in garlic, onion and celery. Cook until soft. Add in chicken broth and bring to a boil. Add macaroni, spinach and then the heat down to medium low. Cook noodles until al dente and take off heat. Add in heavy cream while stirring and Parmesan cheese. Garnish with fresh parsley and enjoy!
