Dense Bean Salad

Dressing

add everything to a food processor and blend!  Add as the first layer of your jarred salad!

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 5 cloves garlic
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 1 tsp paprika
  • Salt and pepper to taste

Salad

Rinse all beans!

  • 15 oz can black beans
  • 15 oz can kidney beans
  • 15 oz can chickpeas
  • 1 orange bell pepper(diced)
  • Purple onion (1/4 cup-1/2 cup)
  • 2 avocados (big chunks)
  • T tbsp parsley(chopped)
